The cheese is cured for a minimum of 4 months and then during the final stages of ripening, the cheese is soaked in extra virgin olive oil and Oloroso sherry to enhance it's natural floral and herbaceous notes. It's firm and white with a clean nutty flavour that fades on the Oloroso sherry
